Apple and Blackberry Crumble Cake ...

This cake is a real treat, its a cake / pudding hybrid. Now is a great time of year to use seasonal produce and after a fun day foraging in the hedgerows with my lovely friend Jenna, I was inspired to bake this apple and blackberry crumble cake...  

Ingredients -  

Cake mix -  

6oz Butter

6oz Sugar

6oz Self raising flour 

3 Free range eggs

50ml milk

1-2 cooking apples

1 punnet Blackberries

1 tsp Baking powder

4 drops of Vanilla essence

0.5 tsp Cinnamon

 

Crumble-

3oz Butter

3oz Sugar

3 oz Plain flour

0.5 tsp Cinnamon

Pre heat fan oven to 160 degrees.

To make the crumble rub together the butter sugar flour and cinnamon using your fingers until the mixture resembles bread crumbs. Put to one side.

Peel and cut the apples into cubes, wash the blackberries.

Cream together the butter and sugar and add the three eggs.

Add flour and baking powder & milk.

Fold in the apple and blackberries (keep a few back for the topping) and pour the mixture into a pre greased round baking tray.

Sprinkle the crumble mixture over the top followed by some apple and blackberries.

Bake in the oven for 50-55 minutes or until golden brown and cooked through.

Leave to cool and serve with tea as an afternoon treat or serve hot as a pudding with a generous dollop of custard or cream.
