This cake is so easy to throw together, great if you have visitors, or simply have a cake craving. Makes a lovely tea time snack and thanks to the cinnamon and nutmeg will leave your kitchen smelling deliciously festive.

Ingredients -

7oz butter

7oz sugar

7oz self raising flour (gluten free works just as well)

3 free range eggs

50ml milk

1 heaped tsp cinnamon

1 flat tsp nutmeg

4oz dried fruit / raisins / sultanas

Drizzle -

1/3 cup icing sugar

2 tsp water

1 pinch cinnamon

Pre hear the oven to 180 degrees.

Lightly grease a loaf tin.

Cream together the butter and sugar, mix in the eggs milk and flour.

Add the cinnamon, nutmeg and finally the fruit.

Pour the mixture into the loaf tin and bake for 45 - 55 minutes until golden and cooked through.

Once out of the oven pierce holes in the top of the cake using a thin skewer and pour the drizzle over liberally.

Leave to cool before serving.

Perfect with a nice strong pot of tea.
